Coconut Flour Banana Nut Bread - #BreadBakers

This month, the bread bakers are going nuts! We could use nuts in any form, and I pictured a nutty banana bread made with cassava flour. But cassava flour wants me to work for my goodies.

I just wasn't happy with the bread's texture, and it seemed a tad too oily. I could adjust the oil, but something about the texture threw me off. It improved over the couple of days I ate it, but I decided to leave it. I had a similar texture issue with pumpkin bread, and I need to do more experiments to see if my cassava flour doesn't work well when I use a lot of wet ingredients.

Thankfully, I have a lot of coconut flour, so I decided to switch to that instead. Coconut flour will not give you the same texture as wheat flour. However, it will still bring you banana bread joy. So whip this up, or try one of the other nutty options from the Bread Bakers' list below.

Coconut Flour Banana Nut Bread

Ingredients

4 very ripe bananas
2 eggs
1/2 cup peanut butter
1/4 cup sugar
1 teaspoon vanilla
2 teaspoons baking powder
2 teaspoons of cinnamon
1/2 teaspoon baking soda
1/8 teaspoon salt
1/2 cup coconut flour
1/2 - 3/4 cup chopped nuts

Directions

Preheat oven to 350 F and line an 8" x 4" pan with parchment paper.

Mash the bananas, then add the eggs, peanut butter, sugar, and vanilla. Mix well. Sprinkle in baking powder, cinnamon, baking soda, and salt over the mixture then mix well.

Stir in the coconut flour, followed by some of the nuts. Reserve some to sprinkle on top of the loaf.

Pour into the prepared pan, sprinkle on the nuts, and bake for 50 minutes or until a toothpick inserted into the pan comes out clean.

Cool for 15 minutes. Remove from the pan and cool on a wire rack until completely cool. Do not slice while warm.

Notes

  • Many recipes use a lot more eggs, but the peanut butter helps to bind things without needing as many eggs.
  • You can use any nut flour. The peanut butter flavour was strong at first, and then I didn't notice it anymore.

  2. I haven’t baked with coconut flour yet and will have to try it. I’ve tried cassava flour but it’s expensive here! Your bread looks great. Thanks for hosting.

  3. Isn't coconut flour crazy in that you don't need very much to make a lovely bread? Next time I have bananas that are getting banana bread worthy, I'll be trying this, Kelly!
